It is not "healthy" brown rice, by any stretch of the imagination.&lt;br /&gt;&lt;br /&gt;1/4 C butter, melted&lt;br /&gt;onion (no measurement, just a small handful to taste)&lt;br /&gt;1 C rice&lt;br /&gt;1 can beef bouillon soup (beef broth)&lt;br /&gt;1 can beef consomme soup&lt;br /&gt;&lt;br /&gt;Stir rice and onion nito melted butter.  Put in casserole dish (1.5 Q) and pour in both cans of soup.  Cover.  Bake at 375 degrees about 1 hour. In a medium bowl, mix together the bread crumbs, cheese, salt, thyme and basil. Mix well. Put melted butter/margarine in a bowl or dish for dipping.&lt;br /&gt;Dip chicken pieces into the melted butter/margarine first, then coat with the breadcrumb mixture. for the dinner swap this past week.&lt;br /&gt;i thought it was yummy. &lt;br /&gt;serves 4. &lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;2 skinless, boneless chicken breasts&lt;br /&gt;1/2 teaspoon olive oil&lt;br /&gt;1/2 teaspoon minced garlic&lt;br /&gt;1/4 teaspoon ground cumin&lt;br /&gt;2 (14.5 ounce) cans chicken broth&lt;br /&gt;1 cup frozen corn kernels&lt;br /&gt;1 cup chopped onion&lt;br /&gt;1/2 teaspoon chili powder&lt;br /&gt;1 tablespoon lemon juice&lt;br /&gt;1 cup chunky salsa&lt;br /&gt;8 ounces corn tortilla chips&lt;br /&gt;1/2 cup shredded Monterey Jack cheese (optional)&lt;br /&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;In a large pot over medium heat, saute the chicken in the oil for 5 minutes. Add the garlic and cumin and mix well. Then add the broth, corn, onion, chili powder, lemon juice and salsa. Reduce heat to low and simmer for about 20 to 30 minutes.&lt;br /&gt;Break up some tortilla chips into individual bowls and pour soup over chips. I &lt;a href="http://chicklegirl.blogspot.com/2008/01/anyone-can-cook.html"&gt;made it last night&lt;/a&gt; but forgot to take a picture (sorry!)&lt;br /&gt;&lt;br /&gt;Filling:&lt;br /&gt;1/3 cup butter&lt;br /&gt;1/3 cup flour&lt;br /&gt;1/3 cup chopped onion&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1/4 teaspoon pepper&lt;br /&gt;1-3/4 cups chicken broth (about 1 can)&lt;br /&gt;2/3 cup milk (or half-and-half to make the filling a bit richer, which I did)&lt;br /&gt;2 cups chicken, cooked and cut into pieces&lt;br /&gt;1 package peas and carrots&lt;br /&gt;&lt;br /&gt;Pastry dough:&lt;br /&gt;2 cups flour&lt;br /&gt;2 teaspoons celery seed&lt;br /&gt;1 teaspoon salt&lt;br /&gt;2/3 cup plus 2 tablespoons shortening&lt;br /&gt;5 tablespoons ice water&lt;br /&gt;&lt;br /&gt;(Note: I found the dough to be fragile, tearing easily. You may want to make the dough first, then refrigerate it while preparing the filling to make it easier to handle.)&lt;br /&gt;&lt;br /&gt;In a saucepan, melt butter over low heat. Blend in flour, onion and seasonings. Cook, stirring, until mixture is bubbly. Remove from heat and whisk in chicken broth and milk. Heat to boiling, stirring constantly. Boil, stir one minute. Gently stir in chicken and vegetables, remove from heat and set aside.&lt;br /&gt;&lt;br /&gt;Preheat oven to 425◦ F.&lt;br /&gt;&lt;br /&gt;Prepare pastry by sifting together dry ingredients in a large mixing bowl. Cut in shortening. Sprinkle in ice water one tablespoon at a time, until all flour is moistened and dough almost cleans sides of bowl. Gather dough into a ball. On a lightly floured board, roll 2/3 of the dough into a circle. Ease pastry into a 9" or 10" pie dish. Pour filling into pan. Roll remaining dough into&lt;br /&gt;a circle; place over filling. Crimp edges and cut slits in center of crust to allow steam to escape.&lt;br /&gt;&lt;br /&gt;Bake at 425◦ F for 30-35 minutes. It is a little bit like stroganof and squash.  Here is the recipe:&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Dinner in a Pumpkin&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1 small to medium pumpkin&lt;br /&gt;1 onion, chopped&lt;br /&gt;2 Tbsp. vegetable oil&lt;br /&gt;2 lbs. hamburger&lt;br /&gt;2 Tbsp. soy sauce&lt;br /&gt;2 Tbsp. brown sugar&lt;br /&gt;1 4 oz. can sliced mushrooms, drained&lt;br /&gt;2 cans cream of chicken soup&lt;br /&gt;1 1/2 cups cooked rice&lt;br /&gt;1 8 oz. can chestnuts, drained&lt;br /&gt;&lt;br /&gt;Cut top off pumpkin.  Clean out seeds and pulp.  Heat oven to 350 degrees.  In a large skillet, sauté onions in oil.  Add meat and brown.  Drain.  Add soy sauce, brown sugar, mushrooms and soup.  Simmer for 10 minutes.  Add cooked rice and chestnuts.  Spoon mixture into cleaned pumpkin.  Replace pumpkin top.  Bake 2 hours on baking sheet. Instant Chocolate Pudding Mix&lt;br /&gt;2 cups Heavy Cream&lt;br /&gt;1 cup Milk&lt;br /&gt;&lt;br /&gt;Necessary Hedonistic Flourish:&lt;br /&gt;1 Pkg. Chocolate Chips&lt;br /&gt;&lt;br /&gt;DIRECTIONS:&lt;br /&gt;&lt;br /&gt;1. Preheat oven to 425 degrees F (220 degrees C).&lt;br /&gt;2. Mix together Chocolate Instant Pudding Mix, Heavy Cream and Milk. Cover and refrigerate to set.&lt;br /&gt;3. Whisk together Flour and Salt. Set aside.&lt;br /&gt;4. In a pot (2 quart or larger), bring Water and Butter to a rolling boil. Remove from liquid from heat and stir in Flour and Salt mixture. Stir until the mixture forms a ball.&lt;br /&gt;5. Transfer the dough to a large mixing bowl and allow it to cool for 3 minutes. Using a wooden spoon or stand mixer, beat in the Eggs one at a time, mixing well after each.&lt;br /&gt;6. Drop dough by tablespoonfuls onto an ungreased baking sheet. (Parchment paper or Silpat liner work best to prevent sticking.)&lt;br /&gt;7. Bake for 20 to 25 minutes in the preheated oven, until golden brown. Centers should be dry.&lt;br /&gt;8. When the shells are cool, either split and fill them with the pudding mixture, or use a pastry bag to pipe the pudding into the shells.&lt;br /&gt;9. Add dry ingredients and mix until all ingredients are moist. Spread dough onto 1 large cookie tray leaving about 1 inch from the edges. Bake 15 minutes at 325 degrees. In a large bowl, mix flour and sugar. Add strawberries and chopped rhubarb. Toss with sugar and flour and let stand for 30 minutes (letting the filling rest is essential, or the pie will be too runny). Pour filling into pie crust. Dot top with butter, and cover with top crust. Seal edges of top and bottom crust with water. Apply yolk to top of pie, using a pastry brush. Sprinkle with sugar. Cut small holes in top to let steam escape. Bake at 400 degrees F (200 degrees C), for 35 to 40 minutes, or until bubbly and brown. Cool on rack. &lt;/p&gt;&lt;p&gt;And here's my recipe for a 9" double crust:&lt;/p&gt;&lt;p&gt;2 1/2 cups all-purpose flour&lt;br /&gt;1 teaspoon salt&lt;br /&gt;2 sticks (1 cup) butter, cold, cut into small cubes&lt;br /&gt;1/4 cup ice water, plus more if needed &lt;/p&gt;&lt;p&gt;In a mixing bowl, combine flour and salt. Add butter, and use a pastry blender to cut the butter in until mixture resembles coarse crumbs with some larger pieces remaining, about 10 seconds. &lt;/p&gt;&lt;p&gt;Add ice water two tablespoons at a time, working it in before adding more, just until dough holds together without being wet or sticky. Test the consistency by squeezing a small amount of dough together; if it is still too crumbly, add a bit more water, 1 tablespoon at a time.&lt;br /&gt;&lt;br /&gt;Turn out dough onto a clean work surface. Divide in half, and place each half on a piece of plastic wrap. Shape into flattened disks. Wrap in plastic, and refrigerate at least 1 hour or overnight. Frozen hash browns&lt;/li&gt;&lt;li&gt;1/2 C. Butter, melted&lt;/li&gt;&lt;li&gt;3 Beaten eggs&lt;/li&gt;&lt;li&gt;1C. Half and half&lt;/li&gt;&lt;li&gt;1/2 tsp. Seasoned Salt&lt;/li&gt;&lt;li&gt;1C. Grated Swiss cheese&lt;/li&gt;&lt;li&gt;1C. Grated cheddar cheese&lt;/li&gt;&lt;li&gt;1C. Diced ham or cooked, crumbled bacon&lt;/li&gt;&lt;/ul&gt; &lt;p&gt;Put frozen hash browns into a 9x13 inch pan. Pour melted butter over. Bake for 20 minutes at 375*. Combine remaining ingredients in a large bowl. Pure on top of potatoes and mix. Return pan to oven and cook another 40 minutes.&lt;/p&gt; &lt;p&gt;When serving I like to top it with sour cream and salsa (homemade if possible) and a couple of slices of avocados. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.&lt;br /&gt;In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Chinese pea pods, ends removed&lt;/li&gt;&lt;li&gt;2 Medium avocados, diced&lt;/li&gt;&lt;li&gt;1 C. Chopped pecans, toasted&lt;/li&gt;&lt;li&gt;Lettuce leaves for garnish, red leaf looks nice&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;Dressing:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;2 Cloves garlic, minced&lt;/li&gt;&lt;li&gt;1 Tbsp. Dijon mustard&lt;/li&gt;&lt;li&gt;1/2 tsp. Salt&lt;/li&gt;&lt;li&gt;1/4 tsp. Sugar&lt;/li&gt;&lt;li&gt;1/4 tsp. Pepper&lt;/li&gt;&lt;li&gt;1/3 C. Seasoned rice vinegar&lt;/li&gt;&lt;li&gt;1/2 C. Vegetable oil&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;Combine dressing in blender.  Cover and refrigerate.  Cook rice according to package directions.  Mix with all salad ingredients except avocados and pecans.  Combine with dressing and refrigerate 2-4 hours or up to 24 hours. /&gt;1/2 small red onion, chopped&lt;br /&gt;1 small can diced green chilis&lt;br /&gt;    (also good with 1 small diced jalapeno pepper instead)&lt;br /&gt;1 3/4 c. chicken broth&lt;br /&gt;1 c. whole sour cream&lt;br /&gt;freshly ground black pepper, to taste&lt;br /&gt;&lt;br /&gt;Prepare salsa verde:  In meduim saucepan, bring tomatillos, garlic, onion, chilis and broth to a boil over med-high heat. Reduce heat to low and simmer until tomatillos and onions are soft (about 20 minutes.)  Let cool!  Pour into a blender and puree.  Add sour cream and pepper and blend till smooth.  Pour sauce back in to saucepan and simmer over low heat.&lt;br /&gt;&lt;br /&gt;Enchiladas&lt;br /&gt;&lt;br /&gt;4 boneless skinless chicken breasts&lt;br /&gt;1/2 c. chopped fresh cilantro (+ 1 more tablespoon, chopped, for garnish)&lt;br /&gt;salsa verde&lt;br /&gt;12 corn tortillas&lt;br /&gt;1 cup grated monterey jack cheese&lt;br /&gt;&lt;br /&gt;Preheat oven to 400 degrees.&lt;br /&gt;Boil chicken until cooked through, cool and shred. &lt;br /&gt;In a large bowl, combine cooked chicken and cilantro with 1/3 cup salsa verde.  Spoon another 1/3 cup salsa verde into bottom of a greased 9x13 inch baking pan.&lt;br /&gt;Using tongs, dip tortillas one at a time into remaining simmering sauce.  Soften tortilla about 5 seconds.  Transfer tortilla onto a plate.  Spoon about 1/4 cup chicken filling onto center of tortilla.  Roll tortilla around filling and place, seam side down, in baking pan.  Repeat with all tortillas and filling.&lt;br /&gt;Pour remaining salsa on top of filled tortillas.  Sprinkle with grated cheese. Bake until enchiladas are hot and cheese is melted, about 25 minutes.  Garnish with remaining cilantro.&lt;br /&gt;&lt;br /&gt; (I serve this with spanish rice and black bean soup. In a small bowl, whisk together all the ingredients.&lt;/div&gt; &lt;div&gt;2. Place tuna steaks in a resealable plastic bag and pour marinade over steaks.  Seal the bag and turn to coat&lt;/div&gt; &lt;div&gt;Marinate in the frig for 1 hour&lt;/div&gt; &lt;div&gt;3. Brush or spray the grill grid with vegetable oil&lt;/div&gt; &lt;div&gt;4. Heat oven to 425°. Arrange bacon strips on a wire rack set or on parchment paper on a baking pan. Place pan in oven until bacon is golden brown and crisp, about 15-20 minutes. Remove from oven, being careful of the bacon fat that has collected under the rack, and set aside.&lt;br /&gt;&lt;br /&gt;2. Arrange lettuce in the bottom of a salad bowl; drizzle with half the avocado dressing. Cut tomatoes into 1/4-inch-thick slices; cut cherry tomatoes, depending on size, in half. Arrange tomato slices over lettuce; scatter cherry tomatoes over tomato slices.&lt;br /&gt;&lt;br /&gt;3. Set aside two strips of bacon for the dressing. Crumble the remaining bacon strips over tomatoes. Drizzle with remaining avocado dressing, season with salt and pepper to taste, and serve immediately. Serves 12.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Dressing:&lt;br /&gt;&lt;br /&gt;1 ripe avocado&lt;br /&gt;¼ cup loosely packed fresh basil leaves&lt;br /&gt;1 small clove garlic, peeled (or 1/2 teaspoon garlic powder)&lt;br /&gt;Juice of 2 limes&lt;br /&gt;3 tablespoons red-wine (I use balsamic) vinegar&lt;br /&gt;½ cup olive oil&lt;br /&gt;½ cup water (the original recipe doesn't call for this, but I use it to thin out the dressing for drizzling)&lt;br /&gt;2 strips bacon&lt;br /&gt;Salt and freshly ground black pepper&lt;br /&gt;&lt;br /&gt;Note: Because of the bacon and balsamic vinegar, this dressing will have a rather unappetizing brownish green appearance. Once you get past the way it looks, it's actually one of the most delicious dressings ever—but if the look bothers you, just omit the bacon and substitute a paler vinegar such as cider vinegar.&lt;br /&gt;&lt;br /&gt;Slice avocado lengthwise. Remove and discard the pit and peel, and place flesh in the bowl of a food processor. Add basil, garlic, lime juice, and vinegar; process until combined. Slowly add olive oil through the machine’s feed tube, and process until the dressing is smooth. It should have a thick but pourable consistency; give an extra squeeze or two on the limes to adjust consistency. Season with salt and pepper, and use immediately. Mix dressing ingredients.&lt;br /&gt;&lt;br /&gt;2. To prepare quinoa salad: In a medium sauce pan, bring quinoa and&lt;br /&gt;water to a boil, reduce heat, cover, and simmer for 15 minutes.&lt;br /&gt;Remove from heat and transfer to a boil.  Fluff with fork and stir in&lt;br /&gt;green onions.&lt;br /&gt;&lt;br /&gt;3. When quinoa has cooled, stir in corn, cilantro, and pine nuts.&lt;br /&gt;&lt;br /&gt;4. Mix together ingredients for bean salad.  Stir in 3 T. of the&lt;br /&gt;dressing and refrigerate.&lt;br /&gt;&lt;br /&gt;5. Stir remaining dressing into the quinoa salad.  Cover and refrigerate.&lt;br /&gt;&lt;br /&gt;6. Bring the salads out of the refrigerator 30 minutes before serving&lt;br /&gt;(or like me, make it right before you eat it and skip the&lt;br /&gt;refrigerator).  Spoon quinoa salad on a platter and top with bean&lt;br /&gt;salad.
